Vegetarian, vegan, gluten-free and allergy do not work the same way in Japan. JNTO’s vegetarian guide makes the key point clearly: these diets are more available than before, especially in major cities, but they are still not as universally understood as in many Western countries.
Hidden ingredients are the real issue
JNTO specifically advises travelers to check dashi and other base ingredients. Many dishes can look vegetarian while still relying on fish-based broth or other animal-derived components.
Cities are easier, rural areas work best with advance notice
Tokyo, Kyoto and Osaka are much easier than many first-time visitors expect. Outside big cities, ryokan can sometimes be the better solution if you communicate clearly in advance.
When to get personal help
Personal planning is worth it if you travel with severe allergies, multiple overlapping dietary needs, or a route heavy on rural stays, ryokan and set-menu dining.
